Sand Ginger Chicken with Fish Sauce
Ingredients 材料:
1 Whole Organic Chicken
80g Sand Ginger Powder
8 Bay Leaves
3 Star Anise
2L Water
250ml Fish Sauce
Some Sesame Oil
3 Tbsp Chek Hup Ginger Brown Sugar菜鸡 – 1只
沙姜粉 – 80克
香叶 – 8片
八角 – 3粒
水 – 2公升
鱼露 – 250毫升
麻油 – 适量
泽合姜红糖 – 3汤匙
Method 步骤:
Clean and cut the chicken.
把菜鸡处理好。
Boil the water, add the bay leaves, star anise, fish sauce, sand, ginger powder and ginger brown sugar inside, keep boiling for 3 minutes. Add the chicken inside and blanch it then cover up with lid and cook for 45 minutes.
把水煮开后放入香叶,八角,鱼露,沙姜粉和姜红糖煮开3分钟,放入菜鸡烫后关盖焖煮45分钟。
Remove the chicken from pot, wipe over the chicken with sesame oil and let cool. Cut into pieces and place it on a plate. At last, pour in the master stock to cook it again. Ready to serve.
把鸡从锅中拿出来后抹上麻油放置冷却,再切块后摆盘,过汤汁烫一烫即可。
