煎酿海参

Sea Cucumber with Pork and Shrimp Paste

Ingredients 材料:

4 Sea Cucumber
4 Bok Choy
100g Minced Meat
50g Deveined Shrimps
1 Spring Onion
Some Ginger
1 Shiitake Mushroom
Some Corn Starch

毛秃参 – 4条
小白菜 – 4颗
肉碎 – 100克
虾仁 – 50克
葱 – 1根
姜 – 适量
冬菇 – 1粒
生粉 – 适量

Marinade 腌制材料:

Half Tsp Oyster sauce
Half Tsp Soy Sauce
Some Chinese Wine
Some White Pepper
1 Tbsp Water
1 Tsp Corn Starch
1 Tsp Sesame Oil

蚝油 – 半茶匙
酱油 – 半茶匙
花雕酒 – 少许
胡椒粉 – 少许
水 – 1汤匙
生粉 – 1茶匙
麻油 – 1茶匙

Seasoning 调味料:

Some Salt
2 Tbsp Soy Sauce
2 Tbsp Oyster Sauce
1 Tsp Dark Soy Sauce
Some Chinese Wine
Some Sesame Oil
600ml Chicken Soup
Some White Pepper
Half Tbsp Chek Hup Diamond Rock Sugar

盐 – 少许
酱油 – 2汤匙
蚝油 – 2汤匙
老抽 – 1茶匙
花雕酒 – 适量
麻油 – 少许
鸡汤 – 600毫升
胡椒粉 – 少许
泽合冰糖花 – 半汤匙

Flour Solution 芡汁:

1 Tbsp Potato Starch
2 Tbsp Water

风车粉 – 1汤匙
水 – 2汤匙

Method 步骤:

Prepare and cut all the ingredients.

把所有材料切好备用。

Mix well the minced meat with marinade, shrimp paste, spring onion and diced shiitake mushroom. Then stretching and throwing the paste in the bowl.

把肉碎,腌料,虾饺,青葱和冬菇粒混合均匀后拍一拍。

Dry the sea cucumber and wipe with some potato starch at the inner part of sea cucumber, then stuff with minced meat and wipe some water on it.

把海参内部抹干,沾上生粉后酿入馅料,再把外表沾湿。

Heat up some oil in a wok, add ginger and spring onion inside to saute until fragrant. Add the sea cucumber to fry until golden. Then add the wine and chicken soup, bring to a boil.

锅中烧热适量油,加入姜和葱炒至爆香后加入海参煎至金黄色,再加入酒和鸡汤煮开。

Add the remaining seasoning inside and bring to a boil again, turn to medium heat and cover up with lid, stew for 10 minutes.

把剩下的调味料加入锅中煮开,转中火关盖焖10分钟。

Remove the sea cucumber from wok and place it on a plate, add the bok choy into the wok to blanch it. Then remove and place it on the plate.

把海参捞出装盘,把小白菜放入锅中汆烫后捞起摆盘。

Sieve the sauce and stir in the flour solution. Drizzle over the sea cucumber with the sauce. Ready to serve.

把汤汁过滤后加入芡汁勾芡,把汤汁淋在盘中即可。
