红烧狮子头

Braised Meatballs

Ingredients 材料:

500g Minced Meat
1 Rehydrated Shiitake Mushroom
5 Water Chestnuts

肉碎 – 500克
泡发冬菇 – 1粒
马蹄 – 5粒

Marinade 腌肉材料:

Half Tbsp Oyster Sauce
1 Tsp Soy Sauce
¼ Tsp Salt
Some White Pepper
Some Chek Hup Diamond Rock Sugar
1 Tbsp Chinese Wine
1 Egg
100ml Ginger and Spring Onion
Water
1 Tbsp Potato Starch

蚝油 – 半汤匙
酱油 – 1茶匙
盐 – ¼ 茶匙
胡椒粉 – 少许
泽合冰糖花 – 适量
花雕酒 – 1汤匙
鸡蛋 – 1粒
姜葱水 – 100毫升
生粉 – 1汤匙

Sauce 红烧汁:

1 stalk Spring Onion
Some Ginger Sliced
2 Star Anise
1 Cinnamon Roll
2 Dried Red Chili Pepper
1 Tbsp Chinese Wine
1 Tsp Sichuan Pepper
3 Tbsp Oyster Sauce
2 Tbsp Soy Sauce
2 Tbsp Chinese wine
1 Tbsp Dark Soy Sauce
Half Tsp Salt
Some White Pepper
2 Tbsp Chek Hup Diamond Rock Sugar
800ml Water
1/3 Tsp Five Spice Powder

葱 – 1根
姜片 – 适量
八角 – 2粒
桂皮 – 1条
辣椒干 – 2条
花椒 – 1茶匙
蚝油 – 3汤匙
酱油 – 2汤匙
花雕酒 – 2汤匙
老抽 – 1汤匙
盐 – 半茶匙
胡椒粉 – 适量
泽合冰糖花 – 2汤匙
水 – 800毫升
五香粉 – 1/3 茶匙

Method 步骤:

Prepare and cut all the ingredients. Mix well the minced meat with marinade, minced water chestnut and mushroom to marinate.

把所有材料切好备用。把肉碎盒腌肉材料,马蹄和冬菇碎混合均匀。

Turn it to balls. Pre-heat the oil pot, add it inside and fry until finalize. Drain and set aside.

把肉泥捏球状,预热油锅,把肉丸放入锅中炸至定型后捞出备用。

Heat up some oil in a pan, add the onion, ginger, dried chili, star anise and cinnamon inside to saute until fragrant. Then add the remaining seasoning and bring to a boil, add the fry meatballs and cover with lid to stew for 30 minutes.

锅中烧热适量油,加入葱,姜,辣椒干,八角和桂皮炒至爆香然后加入剩下的调味料煮开,再加入炸肉丸关盖焖30分钟。

Remove the meatball from pot and place it on a plate, filter the sauce and stir in the flour solution. At last, drizzle over the sauce on the meatballs. Ready to serve.

把狮子头捞起装盘,把汤汁过滤后勾芡。把酱汁淋在狮子头上即可。
