酸梅鸭

Braised Duck with Sour Plum Sauce

Ingredients 材料:

1 Duck
2 Cinnamon
1 Dried Mandarin Orange Peel
1 Small Piece Ginger
Some Shallot
Some Garlic Clove
4 Sour Plum

鸭 – 1只
桂皮 – 2支
陈皮 – 1片
姜 – 1小块
干葱 – 适量
蒜头 – 适量
水酸梅 – 4粒

Seasoning 调味料:

3 Tbsp Soy Sauce
Some Dark Soy Sauce
2 Tbsp Sour Plum Sauce
2 Tbsp Oyster Sauce
1 Tbsp Rice Vinegar
4 Tbsp Chek Hup Diamond Rock Sugar

酱油 – 3汤匙
老抽 – 适量
酸梅膏 – 2汤匙
蚝油 – 2汤匙
白米醋 – 1汤匙
泽合冰糖花 – 4汤匙

Method 步骤:

Wipe the dark soy sauce on the duck skin.

把老抽涂抹在鸭皮上。

Remove the seed of sour plum.

把水酸梅去除种子。

Heat up some oil in a wok to fry the duck skin until golden brown. Set aside.

锅中烧热适量油,把鸭皮煎香后捞起备用。

Heat up some oil in a wok, add the shallot and garlic clove to saute until fragrant. Add the cinnamon, dried mandarin orange peel, water and all the seasoning inside, bring to a boil. Add the duck inside and cover up with lid to stew for 10 minutes. Turn the duck upside down, cover up and stew again for 10 minutes (repeat twice, total around 45 minutes for stewing).

锅中烧热适量油,加入干葱和蒜头炒香,再加入桂皮,陈皮和所有的调味料煮开。加入鸭关盖焖10分钟后翻面,再焖10分钟(重复2次,总共焖45分钟左右)。

Cut the duck into pieces and place it on a plate. Boil the sauce to thicken then sieve it. Drizzle over the duck with sauce. Ready to serve.

把鸭捞起后切块摆盘,把酱汁煮至浓稠后过滤,把酱汁淋在鸭肉上即可。
