香辣肉碎马铃薯

Braised Potato with Minced Meat

Ingredients 材料:

3 Potatoes(Sliced)
80g Minced Meat
3 Garlic Cloves(Sliced)
1 Dried Chili Pepper(Minced)
1 Spring Onion(Minced)

3粒 马铃薯(切片)
80克 肉碎
3粒 蒜头(切片)
1根 辣椒干(切碎)
1根 葱(切碎)

Seasoning 调味料:

Half Tbsp Fermented Chili Bean Paste
1 Tbsp Oyster Sauce
Half Tbsp Soy Sauce
⅓ Tsp Chicken Stock Powder
1 Tsp Chek Hup Diamond Rock Sugar
Some Dark Soy Sauce
1 Tbsp Chinese Wine

半汤匙 豆瓣酱
1汤匙 蚝油
半汤匙 酱油
⅓ 茶匙 鸡精粉
1茶匙 泽合冰糖花
少许 老抽
1汤匙 花雕酒

Method 步骤:

Prepare and cut all the ingredients.

把所有材料切好备用。

Heat up a pot of oil, add the potato slices into the pot and fry until golden. Remove it from the pot and rinse with water. Drain it and set aside.

先预热油锅,放入马铃薯炸至金黄色后捞起,过清水。

Heat up some oil in a wok, add the garlic slices to saute, then add the dried chili, spring onion white and minced meat to saute again until fragrant.

锅中烧热适量油,加入蒜片炒至爆香后再加入辣椒干,葱白和肉碎炒香。

Add the fermented bean paste and oyster sauce to saute, then add a scoop of water, potatoes and the remaining seasoning except wine. Bring it to a boil, turn to low heat and cover up with a lid to stew for 3 minutes.

锅中加入豆瓣酱和蚝油炒至爆香后倒入一勺水,马铃薯和剩下的调味料煮开,再转小火关盖焖煮3分钟。

At last, add the chinese wine to saute with high heat, place it on a plate and sprinkle with some spring onion. Ready to serve.

最后加入花雕酒大火煸炒,装盘后撒上葱花即可。
