Braised Yee Mee Noodles

Ingredients 材料:

50g Minced Pork
80g Crab Meat
5 Shrimps(Diced)
1 Mushroom(Shredded)
Some Carrots(Shredded)
Fried Shallot
1 Spring Onion(Chopped)
1 Yee Mee Noodles
1 Egg

50克 肉碎
80克 蟹肉
5只 虾仁(切粒)
1粒 冬菇(切丝)
适量 胡萝卜(切丝)
适量 炸葱
1根 葱(切碎)
1粒 伊面
1粒 鸡蛋

Seasoning 调味料:

Some Chinese Wine
Some Salt
Some White Pepper
Some Chek Hup Diamond Rock Sugar
600ml Chicken Soup
Some Potato Starch for thickening

适量 花雕酒
适量 盐
少许 胡椒粉
少许 泽合冰糖花
600毫升 鸡汤
适量 风车粉(勾芡)

Method 步骤:

Heat up some water in a pan, add the crab meat, salt and chinese wine to blanch it. Then turn off the heat and soak it for 5 minutes. Drain it and set aside.

锅中烧开适量水,放入蟹肉,盐和花雕酒飞水后熄火浸泡5分钟,再沥干备用。

Heat up a pot of water, add the yee mee inside and cook it until softened. Drain it and set aside.

煮开一锅水,放入伊面煮软后沥干备用。

Heat up some oil in a wok, add the onion white, minced pork to saute until fragrant. Then add the shrimps to saute again. Add the chinese wine, chicken soup, all the ingredients, rock sugar, pepper powder and salt inside, bring it to a boil, and stew for 2 minutes.

锅中烧热适量油,放入葱白,肉碎炒香后加入虾仁炒香。倒入花雕酒,鸡汤,所有的材料,冰糖花,胡椒粉和盐煮开后焖煮2分钟。

Stir in the flour solution, then stir in the egg. At last, sprinkle some spring onion over it. Ready to serve.

倒入芡汁勾芡后再倒入蛋液。最后撒上葱花即可。
