250g fresh wai sun (cubed), 350g winter melon (cut into chunky pieces), 5pcs coriander root, 10g goji berry, 10 red dates, 200g Chek Hup Diamond Cane Rock Sugar, 150g Chek Hup Crystal Rock Sugar, 40g chrysanthemum flower, 2.2L water
- Boil chrysanthemum flowers in water for 10 minutes. Cover the pot to infuse the flowers for at least 30 minutes until the flavours have developed. Strain the liquid and discard the flowers.
- Add winter melon, wai sun, red dates and Chek Hup Diamond Cane Rock Sugar and boil.
- Reduce the heat and simmer for 30 minutes.
- Add goji berry and Chek Hup Crystal Rock Sugar. Simmer until the sugar has dissolved.
